Vegan Pound Cake
Your new favorite cake just got out of the oven and is filling the kitchen with the most divine smell! This vegan pound cake is whipped up in just 10 minutes and super easy to make. If you like to bake with your children, this recipe will make it easy and fun! It is also the perfect cake to bring to a birthday or dinner party since it is a true people pleaser.
Let’s get to it!
Ingredients:
1 tbsp freshly squeezed lemon juice
1 cup unsweetened almond milk (or sub your favorite plant-based milk)
1/2 cup vegan butter
1/2 cup sugar
2 tsp vanilla extract
1 tbsp maple syrup
2 cups T45 flour
3 tsp baking powder
1/2 tsp sea salt
1 tbsp ground flax seeds
Directions:
1) Pre-heat oven to 170 degrees celsius (350 degrees fahrenheit) and grease a 20-22cm baking pan - set aside.
2) Combine lemon juice and almond milk and set aside to curdle.
3) Add your vegan butter and the sugar in a mixing bowl and use a hand mixer to combine, for approximately 2 minutes. Add the vanilla extract and maple syrup and mix again until combined.
4) Add flour into another large mixing bowl and add baking powder, salt and ground flax seeds. Mix with a silicone spatula until combined.
5) Add your butter mixture to your flour and also pour in the curdled lemon-almond milk - mix all together by hand, again using the silicone spatula. Please do not over-mix, but just as much as there is no flour visible in the mixing bowl anymore. The batter will be thick.
6) Transfer your mixture into your pre-greased pan and bake for approximately 50 minutes. Oven time will vary, so make sure to check in at about 45 minutes. Once cooked through, remove from oven to cool.
